How To Cook Pork Chops In A Cast Iron Skillet
Learning how to cook pork chops in a cast iron skillet is wonderful because it makes a delicious, easy, quick meal. Grab your pork chops, brown them a bit on the outside to add some flavor, and then bake them in the oven. These pork chops in a cast iron skillet will be your family’s new favorite meal!
Today, I’m going to show you how to make pork chops in a cast iron skillet. Lately, we have been having this as a meal once a week! We have a friend who raises our pigs for us and then we get them butchered locally. If you can swing buying meat this way, I highly recommend it!
When we first started ordering full pigs, we got so many pork chops! I had no idea how to cook them. I tried grilling them, but they always ended up dry and chewy. When I started cooking fully on cast iron, I started cooking all of my meats this way. I haven’t looked back since. Although, I am eyeing one of those Blackstone Griddle Stations. I think that’s going to be my next “kitchen” purchase.

How to cook pork chops in a cast iron skillet
To really make the porkchops juicy, you are going to want to brine the pork chops. I only remember to do this about half of the time, so no big deal if you don’t remember either.
Get your tools ready:
- cast iron skillet
- cutting board
- knife
- garlic press (optional)
- something to brine the porkchops in
Get your ingredients ready:
- pork chops
- water
- garlic salt
- salt
- pepper
- onion
- garlic
- any other spices or seasoning you feel like using
Brine your porkchops
I put my pork chops into a 9×13 glass container. Fill it with water, add some salt, garlic, garlic seasoning, and onion powder.
Place the brining pork chops in the fridge for a few hours or up to 24 hours.
Time to cook the cast iron skillet pork chops
- Preheat your cast iron skillet. Preheat oven to 350 degrees.
- Generously salt, pepper, and garlic salt your pork.
- While the skillet is warming, slice up an onion.
- Once the skillet is hot, add about 2 tablespoons of olive oil to the pan.
- Place the pork chops in the skillet. Do not overcrowd the meat. Use more than one skillet if you need to.
- Let the pork chops get a good sear on them. A nice golden brown.
- After a few minutes, flip the pork chops and sear on the other side. Once they are flipped, add the garlic, onions, and whatever other spices you would like.
- Transfer your cast iron skillets to the oven for about 10 minutes, or until the internal temperature of the pork reaches 150 degrees.
- Let the pork chops rest for about 5-10 minutes before slicing to make sure all those juices stay in the meat.
- Pour the juices from the skillet over the porkchops before serving for some extra juiciness!

Serve these porkchops with a side of green beans or broccoli and some sweet potatoes and you have yourself a wonderful meal!

Cast Iron Skillet Porkchops
Ingredients
- pork chops
- water
- garlic salt
- salt
- pepper

- garlic
- any other spices or seasoning you feel like using
Instructions
- Brine porkchops in 1 quart of water with 1/2 cup salt for 30 minutes to 12 hours. This step is optional.
- Take porkchops out of brine (if using) and dry with paper towel.
- Preheat your cast iron skillet. Preheat oven to 350 degrees.
- Generously salt, pepper, and garlic salt porkchops.
- While the skillet is warming, slice up an onion.
- Once the skillet is hot, add about 2 tablespoons of olive oil to the pan.
