Ingredients You’ll Need
- 1 pound ground sausage
- 1 sweet Vidalia or yellow onion, diced
- ⅔ cup red bell pepper, diced
- ⅔ cup yellow bell pepper, diced
- 3 to 4 garlic cloves, minced
- 2 cups dry/uncooked minute or instant rice
- 2 cups chicken broth
- ⅓ to ½ cup fresh Italian flat-leaf parsley leaves, minced
- ½ teaspoon salt
- ½ teaspoon garlic salt
How to Make Ground Sausage and Rice Recipe
In a large skillet or dutch oven, add the ground sausage, breaking it apart as it cooks. Continue cooking for about 5-7 minutes, until it’s browned and cooked through.
Add the diced onion, red bell pepper, and yellow bell pepper. Sauté over medium heat until the onions become translucent and the peppers are soft, about 5 minutes. Make sure to stir in the browned bits of sausage that may be stuck on the bottom of the pan. These add so much flavor.
Add the minced garlic and cook for another minute until fragrant.
Next, add in the uncooked minute rice, allowing it to absorb some of the flavors from the veggies.
Pour in the chicken broth and stir everything together. Bring the mixture to a gentle simmer.
Once the chicken stock starts simmering, cover the pan with a lid and reduce the heat to low. Let it cook for about 5 minutes or until the rice is tender and the liquid is absorbed.
Remove the lid, sprinkle salt, garlic salt, and the finely minced fresh parsley over the dish, and give everything a good stir. Taste and adjust the salt if needed as it is easy to add too much salt to this recipe. Add cheese or any other toppings you would enjoy!
