How to Make the Best Rolls for Christmas Dinner
Don’t worry, the best homemade dinner rolls don’t have to be reserved only for Christmas. You can make these for all your special occasions, any Sunday dinner, or just place them into your weekly baking rotation!
These rolls taste amazing with garlic scape butter melting into them.
Ingredients
- 2 cups warm milk
- 2 tbsp active dry yeast
- 1/4 cup sugar
- 2 tsp salt
- 6 tbsp butter, softened
- 2 eggs, large, room temperature
- 6 cups all purpose flour – give or take a little
- 1 tbsp melted butter
Instructions
- Combine milk, yeast, and sugar in stand mixer. Let sit for 10-30 minutes while the yeast gets activated.If you do not have a stand mixer, feel free to use a wooden spoon. Sometimes, I feel like that is the best way to make bread recipes anyway.

- Turn mixer on low. Add in 3 cups of flour, salt, butter, and eggs.

- Slowly add in the rest of the flour. Starting in 1 cup increments, slowly going down to about a half a cup, watching until the dough starts pulling away from the sides. The amount of flour you add will always need to go by feel, but should be around the 5-6 cup range.

- Once the dough is pulling away and no longer sticking to the sides of the bowl, knead the dough with a dough hook until it is thoroughly kneaded. You can do a golf ball test to check and see that the yeast dough is ready.

- Transfer the dough to a lightly buttered large bowl. Cover with a tea towel and let rise 90 minute in a warm place. Depending on how warm it is, the rise time could slightly different. Just watch the dough rise until doubled.

- Punch dough down and place onto a lightly floured surface. Cut the dough in half and form into individual rolls. If you have a kitchen scale, you can measure each roll and make sure they are even, but I personally just always eyeball it and place the smaller rolls in the middle of the greased baking pan.
- Place rolls in baking dish and rise for 1 hour. If you prefer to put an egg wash on top, do that as soon as the second rise is done.
- Bake rolls at 375 for 20-25 minutes or until golden brown on top. If you remember, after 15-20 minutes, flip the baking dish around in the oven to ensure even baking.
- When rolls come out of oven, brush melted butter or on top.

Make Ahead Options
After forming yeast rolls, cover with plastic wrap and place in the fridge. This will slow down the rising process, making make-ahead options available for you. This is especially helpful if you are making a giant thanksgiving dinner spread. Start these rolls the day before and pull out a few hours before you will be ready to bake. Don’t forget to take the plastic wrap off before placing in the oven.
Place the rolls in a freezer bag if choosing to freeze. Just be sure to take out with extra time to thaw!
