Country Potatoes: The Best Breakfast Side
Country potatoes are the perfect side dish for breakfast. These simple ingredients provide amazing flavor with a glorious golden brown look that you will want to eat any time of day!
This potato recipe is made in a large skillet, ideally, eaten as a breakfast food but are a great side for any meal.

Ingredients Needed
- Potatoes: Russet potatoes have a high starch content providing a great base for the crispy skins and tender interior needed for great breakfast potatoes
- Fat: Butter, lard, or bacon grease all provide great flavor. Olive oil is another option.
- Seasonings: Garlic powder, onion powder, and salt are a great base for this country potatoes recipe
Country Potatoes
Start out with rinsing the potatoes in cold water. Dry off with a paper towel and dice potatoes into small chunks. Try to make the chunks an even size to ensure they are all cooked the same way.
Warm up cast iron skillet over medium heat. Melt butter (or your choice of fat) in pan.
Add raw potatoes to the skillet in a single layer. If you need to make more potatoes, grab a second pan. Do not add too many potatoes to one pan. Season potatoes with salt, garlic powder, and onion powder.
Allow potatoes to cook without flipping for 6-7 minutes minutes. They will be ready to flip when they no longer stick to the cast iron skillet. Do NOT flip too early or you won’t get a nice crispy side.
Flip potatoes and cook an additional 10 minutes.
Potatoes are done when they are fork tender.
Serve up crispy potatoes with a fried egg and side of bacon for a delicious homestead-type breakfast!
