Rhubarb Dream Bars – The Best Springtime Dessert Recipe
Rhubarb dream bars are a delicious dessert made with just a few ingredients. A baked crust topped with a juicy rhubarb mixture of sugar, eggs, and flour makes dessert bars that you will want to have again and again!

If you are looking for a family favorite to have for an afternoon snack or a great recipe to bring to family reunions, this is it. Ingredients Needed for Rhubarb Dream Bars
Crust Ingredients
- 1 cup all purpose flour
- 1/2 cup sugar
- 1/2 cup butter
Filling Ingredients
- 2 eggs
- 1 cup sugar
- 1/4 cup flour
- 1/2 teaspoon salt
- 2 cups rhubarb, chopped
How to Make Rhubarb Dream Bars
Preheat oven to 350 degrees F. Grab a 7×11 pan and place parchment paper into it. This will allow to bars to come out easier when done baking.
Start with the crust.
To make the crust, combine crust ingredients into a blender or food processor until it has turned into small crumbs.

Place crust mixture into prepared pan. Lightly press into bottom of pan. Place in preheated oven and bake for 15 minutes.
Make the filling.
For the filling mixture, in a large mixing bowl, combine filling ingredients and mix together.

Combine.
Take the crust has been par-baked out of the oven.

Top the hot crust with filling mixture.

Place back into the oven to bake for 40-45 minutes or until the top is a nice golden brown and the middle no longer jiggles.

Optional Toppings
- Take a spoonful of coarse sugar and sprinkle on top after rhubarb dream bars have been removed from the oven.
- Serve with vanilla ice cream.
- Top with a powdered sugar frosting or cream cheese frosting.

Can I use frozen or canned rhubarb?
Yes! You can use frozen rhubarb in this. Just be sure to thaw out the rhubarb first and drain any extra liquid. I like to make this recipe a lot in the winter using canned rhubarb. The color isn’t quite as “popping,” but it still tastes just as great! It is a great way to get a taste of spring in the middle of a long winter and you are longing for rhubarb season!
